We all know the weeknights can be hectic once we arrive home from work at 5:30 or 6 pm, and mustering up the energy to cook can be a daunting task. I’m a single girl, living in the suburbs of Dallas, TX and I still feel like it takes a lot of energy to not just call Dominos and order a pizza or the nearest Thai place for my favorite fried rice dish.
One way I avoid the pitfalls of always ordering takeout or going to a drive thru are by setting a weekly menu and doing my grocery shopping upfront. That helps, knowing I have food at home that I just have to craft together for a delicious dish. I am constantly looking for recipes and menus to create a good variety. Cooking for one is NOT easy! But it is doable. Last year, I subscribed to a site that sends weekly e-mail menus, with a grocery list and tells you how many of each item you need and for which dishes. It made my meal planning so much easier and I began to save money in the process. Another bonus!

Main Dish Ingredients:
-1/2 lb lean ground beef
-1/8 tsp salt
-1/4 tsp pepper
-1/4 cup thinly sliced red onion
-1 cup of chopped Roma tomato
-1/2 Tbsp fresh oregano (dry oregano will work just fine)
-1 Tbsp fresh lemon juice
-1 small head Bibb lettuce, leave separated
-3 Tbsp freshly shredded Parmesan cheese
Main Dish Instructions:
1. Cook beef, salt, and pepper in a large skillet over medium-high heat 4-6 minutes or until browned and crumbly.
2. Stir in onion, tomatoes, oregano, and lemon juice. Cook 3 minutes or until thoroughly heated. Spoon onto lettuce leaves; sprinkle with cheese.
Side Dish Ingredients:
-1 Tbsp chopped fresh dill
-1 1/2 Tbsp extra virgin olive oil
-1 1/2 tsp fresh lemon juice
1 tsp honey
-1/8 tsp salt
-1/8 tsp pepper
-1 small seedless cucumber, sliced or chopped (whatever you prefer)
Side Dish Instructions:
1. Whisk together all ingredients except cucumber in a bowl; add cucumber, and toss. Serve on top of beef lettuce wrap, and Enjoy!
